Well it's simple!
Discs grow down from the ceiling, and disks grow up from the floor.

@foone a disc is more resistant to heat and pressure than a disk and better preserves the heat (or lack thereof) of whatever is placed on top of it against the surroundings, but does so more poorly than the third sort, in line with the grading system of food storage and presentation feasibility: disk < disc < dish
