okay. rainbow cake is baking. this process is kind of a pain in the ass - in order to prevent color cross contamination, I need to wash and dry everything that touches the colored batter in between mixing the layers. but hopefully it's worth it and I get a bunch of cakey layers in pretty colors!

@YKantRachelRead
This sounds like a stupid question...sorry.
Are you baking the colours in separate pans?

@TrueNorthSpice yep! the different layers of the cake are different colors, and then you put raspberry jam in between them

@YKantRachelRead
oh good.
I knew someone ( very intelligent ) who thought they could add layers of coloured batter and they ended up with a muddled mess of colours.

@TrueNorthSpice oh no 😂😂😭😭 yep, I can see trying that and ending up with Brownish Swirl Cake

we have: layers! and they're colored! and also browned a bit on the edges, but oh well - those should, in theory, be covered up by the glaze.

next step: wait to cool, then stack and raspberry!

@YKantRachelRead

They weren't accustomed to baking so I guess the error is understandable.

I'm looking forward to photos of your cake....if you don't mind sharing, that it?

@TrueNorthSpice absolutely! even if it ends up kind of a disaster (I'm not nearly as experienced a baker as I am a chef), I'll still be posting pics. I just posted one of the baked layers in fact!

if anyone's wondering what's up with the "wings," it's a technique I learned wayyyy back for getting cake layers cleanly out of the pan: cut some parchment paper in a circle, leaving two wide tabs extending up on either side, and use it to line the bottom of the pan. once the cake is done baking, grab the tabs and the cake lifts right out!

@YKantRachelRead iirc if the surface color of the cake itself matters what you do is make it oversized and slice off a bit?
But yea icing makes that unnecessary.

oh my god this chocolate glaze is so good. and I'm not even a huge chocolate person. I literally licked the spoon clean lol

quality cocoa powder was totally the right call here blobfox_w_ it gave the glaze a slight bitter dark chocolate edge that I think will contrast nicely with the sweetness of the jam

okay, I'm not going to win any awards for cake decorating, but the glaze did its job! now to let it fully set, then slice and nom blobfoxowo
